The sunflower, or formerly Helianthus or Sun (Helianthus annuus), is a large annual plant, belonging to the Asteraceae (Compositae) family, whose flowers are grouped in large flower heads. The genus Helianthus includes about fifty species, all native to North America, including Jerusalem artichoke (Helianthus tuberosus L.).

This plant is widely cultivated for its seeds, which are rich in good quality edible oil (about 40% of their composition). Sunflower is, along with rapeseed and olive trees, one of the three main sources of edible oil in Europe.
The word “sunflower” is borrowed from the Italian girasole, “which turns with the sun”. There are many names or vernacular expressions to designate it: big sun, garden sun, common sun, parrot seed, helianthus …
